How to make Amiya ki Launji?

  • First of all you have to buy raw mangoes. Keep in mind that mangoes should be hard i.e. not ripe.

  • Now wash and peel the mango and with the help of a knife, remove its pulp.

  • Mango seed is also used in launji, so do not make the mistake of throwing it away.

  • Now add about 2 spoons of mustard oil in the pan and add fennel in it.

  • Now add turmeric, salt and red chilli and immediately add chopped mango and mix it in oil.

  • Add as much water as the juicy vegetable and cover and cook until the mangoes are cooked well.

  • Check the amiya by pressing it once with your hand and when it melts, add sugar or jaggery to it.

  • You can keep mango launji as sweet and sour as per your choice.

  • If you need too much water, you can make it a little thicker.

  • Amia ki launji is ready, which you can keep in the refrigerator for about 10-15 days.

  • Whenever you want, you can heat it or eat it as is.
